Behind the Scenes

Preparation of Seafood Chowder

The Unseen Marine is designed to reveal the reality of our ocean nowadays, demonstrating the overlooked issue around us. By engaging the senses and offering a first person experience, we hope to provide our guests with a deeper understanding of the reality of the marine and inspire them to reflect on sustainable consumer practices.
The Main - Grilled Sea Bream

The project is inspired by the Netflix series, Seaspiracy. In a world full of media framing, consumers are often exposed to biased information that may divert attention from critical issues. The platting, aroma and narratives of dishes have been carefully organized to emphasize the urgency of moving toward a renewable fishery practice and popularise the sustainable dining culture.

Research
Site visits and interviews has been conducted with fishmongers and private chefs to develop a deeper understanding on the current fishing industry and the preparation of dining experience.

Menu Design

The menu also has been carefully designed and produced with recycled material. Besides the dishes of the meal being written on the specially designed menu, the dinnerware is also hidden inside. This reflects the vision of The Unseen Marine project, hoping the guests can learn more about the renewable fishery from the dining experience and infuse the concept into their real-life practice.
Every small change together can have a big impact on our future.

This is not the end of the project, instead it is still on the experiment stage. The dining experience will be developed into a more mature event with more organised details after gathering responses and feedbacks.
